While the Crabs and Prawns Shine, the Cooking Style Leaves Room for Improvement
Dining at Ministry of Crab (MOC) in Singapore brings up a question: If Sri Lankan crabs are supposed to taste like this, what have we been eating until now? The restaurant serves consistently high-quality crabs, offering generous, perfectly proportioned specimens that seem meticulously prepared, almost as if they were 3D printed from Sri Lankan swamps.
However, not everything about the dining experience is equally impressive. The crabs are well-sized, but some diners might feel the meat lacks the richness and texture they expected. At times, the crab claws are large but have little substance, with the meat clinging stubbornly to the shell. While you might strike a crab jackpot occasionally, MOC consistently delivers perfectly proportioned crabs, making the variability of other places feel outdated.
Despite the restaurant’s promise of excellent seafood, the cooking style doesn’t quite match the exceptional quality of its ingredients. Prices at Ministry of Crab are steep, and while the seafood offerings, especially the prawns and crabs, are impressive, the overall dining experience could benefit from better preparation and refinement in its cooking techniques.
